Vietnamese-Style Vermicelli Bowls

Ingredients (2 Persons)
- 1/2 pound vermicelli rice noodles
- 2 tablespoons vegetable oil
- 1 pound ground pork, beef, or turkey
- 2 cloves garlic, minced
- 1/4 cup fish sauce
- 1 tablespoon sugar
- 1 red bell pepper, diced
- 1/2 cup diced white onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh basil
- 1/4 cup chopped roasted peanuts
- 1/4 cup diced green onion
- 1 lime, cut into wedges
Directions

Step 1
Bring a large pot of water to a boil. Add the vermicelli noodles and cook until soft, about 4-5 minutes. Drain and rinse with cold water.

Heat the vegetable oil in a large skillet over medium-high heat. Add the ground pork, beef, or turkey and cook until it is no longer pink, about 5 minutes. Add the garlic and cook for 1 minute.

Stir in the fish sauce and sugar. Add the bell pepper and onion and cook until tender, about 3 minutes.

Add the cooked noodles to the skillet and toss to combine. Divide the noodles among 4 bowls and top with the cilantro, mint, basil, peanuts, green onion, and lime wedges.
