Vegan Pumpkin and Lentil Curry
Vegan Pumpkin and Lentil Curry is a hearty and flavorful dish that's sure to please any vegan or vegetarian. Ingredients (2 Persons)
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cayenne pepper (optional)
- 1 (15 ounce) can pumpkin purée
- 1 (14.5 ounce) can diced tomatoes
- 1 (15 ounce) can lentils, drained and rinsed
- 2 cups vegetable broth
- Salt and pepper, to taste
Directions

Step 1
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

Stir in the ginger, curry powder, cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for 1 minute, stirring constantly.

Add the pumpkin purée, diced tomatoes, lentils, and vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, until the lentils are tender.

Season with salt and pepper, to taste. Serve with cooked rice or naan bread.
