Cauliflower & Potato Curry

Ingredients (2 Persons)

  • 1 head of cauliflower, cut into florets
  • 2 large potatoes, peeled and cut into 1/2-inch cubes
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons curry powder
  • 1 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (14.5 ounces) coconut milk
  • 1/2 cup frozen peas
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
  • Step 2
    Add the curry powder, cumin, turmeric, and garam masala and cook until fragrant, about 1 minute.
  • Step 3
    Add the cauliflower, potatoes, diced tomatoes, and coconut milk. Stir to combine and bring to a simmer. Reduce the heat to low and cook for 20 minutes, stirring occasionally.
  • Step 4
    Add the peas and season with salt and pepper. Cook for an additional 5 minutes, or until the vegetables are tender.
