Coconut Chickpea Curry

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder
  • 1 (14-ounce) can coconut milk
  • 1 (14-ounce) can diced tomatoes
  • 2 cups cooked chickpeas
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, and chili powder and cook for 1 minute, stirring constantly.
  • Step 3
    Add the coconut milk, diced tomatoes, and chickpeas and bring to a simmer. Reduce the heat to low and simmer for 10 minutes.
  • Step 4
    Stir in the cilantro and season with salt and pepper. Serve the curry warm over cooked rice or quinoa.
