Indian Palak Paneer

Ingredients (2 Persons)

  • 1 medium onion, diced
  • 1 tablespoon minced ginger
  • 2 tablespoons minced garlic
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1 (14-ounce) can diced tomatoes
  • 1 (14-ounce) can coconut milk
  • 1 cup vegetable stock
  • 1 pound fresh spinach leaves, roughly chopped
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 (14-ounce) package paneer, diced

Directions

  • Step 1
    Heat a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the ginger and garlic and cook for 1 minute, until fragrant.
  • Step 3
    Stir in the garam masala, cumin, turmeric, coriander, chili powder, paprika, cinnamon, cardamom, and cloves. Cook for 1 minute, until fragrant.
  • Step 4
    Add the tomatoes, coconut milk, vegetable stock, spinach, chickpeas, and paneer. Bring to a simmer and cook for 10 minutes, until the sauce has thickened and the flavors have melded together.
  • Step 5
    Serve over basmati rice or with naan.
