Easy Yogurt Curry

Ingredients (2 Persons)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cardamom
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh cilantro, chopped

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Add the ginger, cumin, coriander, turmeric, cayenne pepper, and cardamom and cook for 1 minute, stirring constantly.
  • Step 3
    Add the diced tomatoes and chickpeas and bring the mixture to a simmer. Cook for 10 minutes, until the tomatoes are softened and the flavors are blended.
  • Step 4
    Stir in the Greek yogurt and cilantro and cook for an additional 5 minutes. Serve over cooked rice or quinoa.
