Sri Lankan Fish Curry

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon finely grated fresh ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon yellow mustard seeds
  • 1 teaspoon chili powder
  • 1 (14-ounce) can coconut milk
  • 2 cups fish stock or water
  • 1 pound white fish fillets (such as cod or haddock)
  • 1/2 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, turmeric, cumin, coriander, mustard seeds, and chili powder. Cook for 1-2 minutes, until fragrant.
  • Step 3
    Pour in the coconut milk and fish stock and bring to a simmer. Add the fish fillets and simmer for 5-7 minutes, until cooked through.
  • Step 4
    Stir in the cilantro and season with salt and pepper, to taste. Serve over cooked rice or noodles.
