Vegetarian Sushi Burritos

Vegetarian sushi burritos are a delicious and healthy way to enjoy a sushi-style meal. They are made with sushi-grade vegetables such as cucumber, carrots, avocado, and mushrooms, wrapped in a seaweed wrapper and served with a variety of flavorful sauces. Ingredients (2 Persons)

  • 1 cup cooked sushi rice
  • 1 cup cooked black beans
  • 2 avocados, diced
  • 1 red bell pepper, diced
  • 1/2 cup diced cucumber
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 4 large nori sheets
  • 1/4 cup soy sauce
  • 2 tablespoons sesame seeds

Directions

  • Step 1
    In a large bowl, combine the sushi rice, black beans, avocado, bell pepper, cucumber, onion, and cilantro. Mix until everything is well combined.
  • Step 2
    Lay a nori sheet out on a flat surface. Spread 1/4 of the sushi rice mixture onto the nori sheet and spread it out into a rectangle, leaving a small boarder around the edges.
  • Step 3
    Fold the nori sheet over the mixture and roll it up tightly, pressing down gently to seal the edges.
  • Step 4
    Repeat with the remaining nori sheets and filling.
  • Step 5
    In a small bowl, mix together the soy sauce and sesame seeds. Serve the sushi burritos with the soy sauce mixture for dipping.
