Fish Tikka Masala Curry

- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 teaspoons grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cinnamon
- 1 (14.5-ounce) can diced tomatoes
- 1 (6-ounce) can tomato paste
- 1 (14-ounce) can coconut milk
- 1 pound skinless, boneless white fish fillet (such as cod or haddock)
- 2 tablespoons minced fresh cilantro
Directions

Step 1
Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic, ginger, cumin, coriander, garam masala, turmeric, chili powder, cardamom, and cinnamon and cook until fragrant, about 1 minute.

Add the diced tomatoes, tomato paste, and coconut milk and stir to combine. Bring the mixture to a simmer and cook for 5 minutes.

Add the fish to the skillet and cook until it is cooked through, about 5 minutes. Stir in the cilantro and season with salt and pepper to taste.
