Coconut Milk Curry

Coconut milk curry is a popular dish from South and Southeast Asia. It is a creamy, flavorful curry made with coconut milk, spices, and herbs. Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper, or to taste
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1 can (14 ounces) coconut milk
  • 1 can (14 ounces) diced tomatoes, with juice
  • 1 cup vegetable broth
  • 1 cup diced carrots

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Step 2
    Stir in the ginger, cumin, coriander, turmeric, cayenne, cinnamon and cardamom and cook for 1 minute.
  • Step 3
    Add the coconut milk, tomatoes, broth and carrots and bring to a simmer. Reduce the heat to low and simmer for 10-15 minutes, until the carrots are tender.
  • Step 4
    Serve over cooked rice or quinoa, garnished with fresh cilantro and a squeeze of lime juice, if desired.
