Vegan Lentil and Spinach Curry

Vegan Lentil and Spinach Curry is a delicious and wholesome vegan curry. It is made with red lentils, spinach, onions, garlic, ginger, and a combination of spices. Ingredients (2 Persons)

  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 teaspoons curry powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 2 cups vegetable broth
  • 1 cup dried red lentils
  • 1 (14 ounce) can diced tomatoes
  • 2 cups fresh spinach
  • Salt and pepper to taste

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened and translucent, about 5 minutes.
  • Step 2
    Stir in the ginger, curry powder, garam masala, cumin, and turmeric. Cook for 1 minute, until fragrant.
  • Step 3
    Add the vegetable broth, lentils, and diced tomatoes to the pot. Increase the heat to high and bring the mixture to a boil.
  • Step 4
    Reduce the heat to low and simmer for 20-25 minutes, until the lentils are tender. Stir in the spinach and cook for an additional 5 minutes, until the spinach is wilted.
  • Step 5
    Taste and adjust the seasoning with salt and pepper if desired. Serve hot.
