Japanese Miso Soup

Miso soup is a traditional Japanese soup made from a stock called "dashi" and a fermented paste called "miso". It is a popular side dish in Japan and is served with every meal. The soup is believed to have originated from China and was brought to Japan during the Nara period (710–794). It is usually made with a stock made of either dried bonito flakes or seaweed and is flavored with miso paste, which is made from fermented soybeans. Common ingredients added to miso soup include tofu, wakame seaweed, and scallions.

Ingredients (2 Persons)

  • 4 cups dashi
  • 4 tablespoons miso
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1/2 cup sliced shiitake mushrooms
  • 1/2 cup diced firm tofu
  • 3 green onions, sliced

Directions

  • Step 1
    Heat the dashi in a large pot over medium-high heat. Bring to a simmer.
  • Step 2
    Reduce the heat to low and add the miso, soy sauce, and mirin. Stir until the miso is dissolved.
  • Step 3
    Add the shiitake mushrooms and tofu and cook for 5 minutes, until the mushrooms are softened.
  • Step 4
    Add the green onions and cook for 1 minute, stirring to combine.
  • Step 5
    Serve hot.
