Vegan Sushi Spring Roll

Ingredients (2 Persons)

  • 1 cup cooked sushi rice
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon salt
  • 1/2 cucumber, thinly sliced
  • 1/2 avocado, thinly sliced
  • 1/2 carrot, julienned
  • 1/4 cup shelled edamame
  • 4 sheets nori seaweed

Directions

  • Step 1
    In a large bowl, combine the cooked rice, rice vinegar, and salt. Stir to combine.
  • Step 2
    Lay one sheet of nori on a cutting board. Cover the nori with a thin layer of the rice mixture, leaving a 1-inch border on each side.
  • Step 3
    Arrange the cucumber, avocado, carrot, and edamame on the rice in a single layer, leaving a 1-inch border on each side.
  • Step 4
    Gently roll the nori into a tight cylinder, using your hands to press and seal the edges.
  • Step 5
    Repeat with the remaining nori and filling ingredients.
