Tomato Coconut Curry

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 3 tablespoons tomato paste
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 14-ounce can coconut milk
  • 1 16-ounce can diced tomatoes, undrained
  • 1/4 cup chopped cilantro, for garnish

Directions

  • Step 1
    Heat the oil in a large pot over medium-high heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, curry powder, cumin, tomato paste, turmeric, and cayenne pepper and cook for 2 minutes, stirring constantly.
  • Step 3
    Stir in the coconut milk, tomatoes and their juices, and 1/2 cup of water. Bring the mixture to a simmer, reduce the heat to low, and simmer for 20 minutes, stirring occasionally.
  • Step 4
    Serve the curry over cooked rice, garnished with cilantro.
