Japanese Shabu-Shabu

Japanese Shabu-Shabu is a popular Japanese dish consisting of thinly sliced beef and vegetables cooked in a hot pot of kombu dashi broth. It is typically served with dipping sauces and a variety of condiments. The name “shabu-shabu” is derived from the sound of the beef being swished in the hot broth. The dish is usually enjoyed by a group of diners, who each take turns swishing the beef and vegetables in the hot pot.

Ingredients (2 Persons)

  • 2 pounds thinly sliced beef
  • 2 (14-ounce) packages of shabu-shabu vegetables
  • 1/2 cup ponzu sauce
  • 1/2 cup sesame oil
  • 1/4 cup soy sauce
  • 1/4 cup sake
  • 1/4 cup mirin
  • 2 tablespoons sugar
  • 1 tablespoon grated ginger

Directions

  • Step 1
    In a large pot, bring 8 cups of water to a boil over high heat.
  • Step 2
    Add the thinly sliced beef and cook for 1-2 minutes until just cooked through.
  • Step 3
    Remove the beef from the pot and set aside.
  • Step 4
    Add the shabu-shabu vegetables to the pot and cook for 2-3 minutes.
  • Step 5
    In a small bowl, mix together the ponzu sauce, sesame oil, soy sauce, sake, mirin, sugar, and grated ginger.
  • Step 6
    Return the beef to the pot and pour in the sauce mixture. Simmer for 2-3 minutes until the sauce thickens.
  • Step 7
    Divide the shabu-shabu between 4 bowls and serve immediately.
