Thai Massaman Curry

Thai Massaman Curry is a popular dish in Thailand that originates from the Muslim community. It is a rich, coconut milk-based curry with a distinct flavor that comes from a combination of spices such as cardamom, cinnamon, nutmeg, cumin and cloves. The dish usually contains potatoes, fish sauce, and peanuts, and can also contain other ingredients such as beef, chicken, or pork. It is often served with jasmine rice or noodles and is a popular meal for any occasion.

Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 2 tablespoons Massaman curry paste
  • 2 garlic cloves, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 potatoes, cut into cubes
  • 1 (13.5 ounce) can coconut milk
  • 1 (14.5 ounce) can diced tomatoes
  • 1/4 cup roasted peanuts
  • 1/4 cup chopped cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the curry paste, garlic, onion, and bell pepper and cook for 5 minutes, stirring occasionally.
  • Step 2
    Add the potatoes and cook for 5 minutes, stirring occasionally.
  • Step 3
    Stir in the coconut milk and diced tomatoes and bring the mixture to a simmer. Reduce the heat to low and cook for 10-15 minutes, until the potatoes are tender.
  • Step 4
    Stir in the peanuts and cilantro. Serve over rice or noodles.
