Thai Red Curry Chicken

  • 1 can (14 ounces) coconut milk
  • 1/4 cup chicken broth
  • 1 teaspoon brown sugar
  • 1/2 teaspoon fish sauce
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, sliced into strips
  • 1/2 cup sliced mushrooms
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium-high heat. Add the garlic and ginger and cook for 1 minute.
  • Step 2
    Stir in the curry paste, coconut milk, chicken broth, brown sugar, and fish sauce. Bring the mixture to a simmer and cook for 5 minutes.
  • Step 3
    Add the chicken, bell pepper, mushrooms, and peas to the skillet and simmer for 10 minutes, or until the chicken is cooked through.
  • Step 4
    Stir in the cilantro and serve over cooked white rice or noodles.
