Salmon Avocado Sushi

Ingredients (2 Persons)

  • 2 cups cooked white rice
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 avocados, peeled and sliced
  • 4 ounces smoked salmon, cut into strips

Directions

  • Step 1
    In a small bowl, combine the rice vinegar, sugar, and salt. Stir to dissolve the sugar and salt, then set aside.
  • Step 2
    In a large bowl, combine the cooked rice and the vinegar mixture. Mix until all the rice is evenly coated.
  • Step 3
    Lay a sheet of nori on a sushi mat. Spread a thin layer of rice over the nori, leaving a 1/2 inch border around the edges. Place the smoked salmon and avocado slices in the center of the nori.
  • Step 4
    Using the sushi mat, roll the nori into a tight log. Slice the log into 8 pieces using a sharp, wet knife.
