Kappa Maki Sushi

Kappa Maki Sushi is a type of sushi roll made with cucumber and vinegar-seasoned rice. It is a popular vegetarian sushi roll that is typically served with a dab of wasabi and a dollop of soy sauce. The roll is made by rolling up a sheet of nori seaweed with the cucumber and the vinegared rice, and then slicing it into individual pieces. Kappa Maki Sushi is an excellent alternative to traditional sushi, as it is lighter, fresher, and typically easier to make.

Ingredients (2 Persons)

  • 3 cups cooked white rice
  • 2 cucumbers, peeled and sliced into thin strips
  • 4 sheets nori seaweed
  • 1/4 cup pickled ginger (optional)
  • 1/4 cup sesame seeds (optional)
  • Soy sauce and wasabi for serving

Directions

  • Step 1
    Wash the rice and cook according to package instructions. Let the rice cool before using.
  • Step 2
    Lay a sheet of nori on a bamboo rolling mat. Wet your hands and spread 1/2 cup of cooked rice onto the nori, leaving about 1 inch at the top of the nori uncovered.
  • Step 3
    Arrange the cucumber strips on top of the rice. Sprinkle with pickled ginger and sesame seeds, if using.
  • Step 4
    Gently lift the edge of the mat closest to you and roll it away from you, pressing firmly to shape the sushi roll. Remove the mat and slice the sushi roll into 8 equal pieces.
