Bean and Sweet Potato Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 3 cups vegetable broth
  • 2 large sweet potatoes, diced
  • 1 can (14 ounces) diced tomatoes
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (15 ounces) red kidney beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 4-5 minutes, until the onion is translucent.
  • Step 2
    Add the cumin, coriander, ginger, turmeric, garam masala, chili powder, and paprika. Sauté for 1-2 minutes, until fragrant.
  • Step 3
    Add the vegetable broth, sweet potatoes, diced tomatoes, chickpeas, and red kidney beans. Bring the mixture to a simmer and cook for 15-20 minutes, until the sweet potatoes are tender.
  • Step 4
    Stir in the cilantro. Serve hot.
