Coconut Rice Pudding

Ingredients (2 Persons)

  • 2 cups long-grain white rice
  • 4 ½ cups water
  • 1 (14-ounce) can coconut milk
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup raisins

Directions

  • Step 1
    In a medium saucepan, combine the rice, water, and coconut milk. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 20 minutes.
  • Step 2
    Stir in the cinnamon, nutmeg, sugar, and vanilla extract. Simmer for 10 minutes, stirring occasionally.
  • Step 3
    Stir in the raisins, cover, and simmer for an additional 5 minutes.
  • Step 4
    Remove the pan from the heat and let the pudding cool for 10 minutes before serving.
