Vegan Carrot and Coconut Curry

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced

  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 4 cups diced carrots
  • 1 can (14 ounces) light coconut milk
  • 1/2 cup vegetable broth
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon salt, or to taste

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, cinnamon, and cayenne pepper and cook for 1 minute, stirring constantly.
  • Step 3
    Add the carrots and cook for 5 minutes, stirring occasionally.
  • Step 4
    Add the coconut milk, vegetable broth, and lime juice and bring to a simmer. Simmer for 10 minutes, or until the carrots are tender.

    Add the salt, to taste, and stir to combine. Serve hot.
