Korean Kimchi Pancakes

Ingredients (2 Persons)

  • 2 cups kimchi, chopped

  • 1/2 cup vegetable oil, for pan-frying

Directions

  • Step 1
    In a large bowl, combine the kimchi, flour, water, and salt. Stir to combine. The mixture should be thick but still pourable.
  • Step 2
    Heat a large skillet over medium heat. Add 1 tablespoon of sesame oil and 1/4 cup of vegetable oil to the skillet. Once the oil is hot, pour 1/4 cup of the kimchi pancake batter into the skillet and spread the batter out into a thin circle.
  • Step 3
    Cook the pancake for 1-2 minutes, until the bottom is golden brown. Flip the pancake and cook for an additional 1-2 minutes, until the other side is golden brown.
  • Step 4
    Transfer the cooked pancake to a plate and repeat with the remaining batter, adding more oil to the skillet as needed.
