Japanese Udon Noodles
Japanese Udon noodles are a type of thick wheat-flour noodle widely enjoyed in Japan. Udon noodles are cooked in a variety of ways, including in hot broth (kake-udon), in a stir-fry (yaki-udon), or chilled in a salad (hiyashi-udon). Udon noodles are usually served with a variety of toppings, such as tempura, green onions, and fish cakes. Udon noodles are a staple of Japanese cuisine, and are enjoyed all over the world.
Ingredients (2 Persons)
- 4 servings udon noodles
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 2 tablespoons soy sauce
- 2 tablespoons mirin
- 1 teaspoon sugar
- 1/4 teaspoon red pepper flakes
- 2 cups vegetable broth
- 1/2 cup sliced shiitake mushrooms
- 1 cup frozen edamame
- 2 cups thinly sliced bok choy
- 2 scallions, sliced
- Sesame seeds for garnish
Directions

Step 1
Bring a large pot of water to a boil. Add the udon noodles and cook according to package directions.

Heat the oil in a large skillet over medium heat. Add the onion and sauté until softened, about 5 minutes.

Add the garlic and ginger and sauté until fragrant, about 1 minute.

Add the soy sauce, mirin, sugar, and red pepper flakes and cook for 2 minutes.

Add the vegetable broth, mushrooms, edamame, and bok choy. Simmer for 5 minutes.

Drain the noodles and add them to the skillet. Toss to combine and cook for 1 minute.

Serve the noodles with the scallions and sesame seeds for garnish, if desired.
