Red Lentil Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 cups vegetable broth
  • 2 cups red lentils, rinsed and drained
  • 1 can (14.5-oz) diced tomatoes
  • 1 can (14.5-oz) coconut milk

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, curry powder, cumin, turmeric, coriander, cayenne pepper, and salt. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Pour in the vegetable broth and lentils and bring the mixture to a boil. Reduce the heat and simmer for 20 minutes, until the lentils are tender.
  • Step 4
    Stir in the tomatoes and coconut milk and cook for an additional 5 minutes. Taste and adjust seasonings, if desired. Serve hot with rice or naan bread.
