Singapore Fried Hokkien Mee
Singapore Fried Hokkien Mee is a popular Singaporean dish consisting of noodles, seafood, pork, and vegetables stir-fried in a thick, dark sauce. Ingredients (2 Persons)
- 2 tablespoons cooking oil
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 carrot, sliced
- 1 red bell pepper, sliced
- 1 pound fresh Hokkien noodles
- 1 tablespoon dark soy sauce
- 1 tablespoon light soy sauce
- 1 teaspoon fish sauce
- 1 teaspoon sugar
- 1/4 teaspoon ground white pepper
- 2 cups chicken broth
- 2 eggs, lightly beaten
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh Thai basil
Directions

Step 1
Heat the oil in a large skillet or wok over medium-high heat. Add the garlic, onion, carrot, and bell pepper and cook until the vegetables are softened, about 5 minutes.

Add the noodles and cook for 2 minutes, stirring frequently. Stir in the dark soy sauce, light soy sauce, fish sauce, sugar, and white pepper and cook for 1 minute.

Stir in the chicken broth and bring to a boil. Reduce the heat to medium-low and simmer for 5 minutes, stirring occasionally.

Stir in the eggs and cook until they are cooked through, about 2 minutes. Stir in the cilantro and basil and cook for 1 minute more.

Serve the noodles hot with your favorite accompaniments.
