Singapore Fried Hokkien Mee

Singapore Fried Hokkien Mee is a popular Singaporean dish consisting of noodles, seafood, pork, and vegetables stir-fried in a thick, dark sauce. The noodles used in this dish are usually thick yellow noodles (Hokkien noodles) which are stir-fried in a wok with pork, shrimp, squid, and vegetables. The sauce used is usually made from a combination of soy sauce, dark soy sauce, and oyster sauce, and is often flavored with garlic, ginger, and chili paste. The dish is usually served with a sprig of fresh coriander and a dash of lime juice.

Ingredients (2 Persons)

  • 2 tablespoons cooking oil
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 1 carrot, sliced
  • 1 red bell pepper, sliced
  • 1 pound fresh Hokkien noodles
  • 1 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon ground white pepper
  • 2 cups chicken broth
  • 2 eggs, lightly beaten
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh Thai basil

Directions

  • Step 1
    Heat the oil in a large skillet or wok over medium-high heat. Add the garlic, onion, carrot, and bell pepper and cook until the vegetables are softened, about 5 minutes.
  • Step 2
    Add the noodles and cook for 2 minutes, stirring frequently. Stir in the dark soy sauce, light soy sauce, fish sauce, sugar, and white pepper and cook for 1 minute.
  • Step 3
    Stir in the chicken broth and bring to a boil. Reduce the heat to medium-low and simmer for 5 minutes, stirring occasionally.
  • Step 4
    Stir in the eggs and cook until they are cooked through, about 2 minutes. Stir in the cilantro and basil and cook for 1 minute more.
  • Step 5
    Serve the noodles hot with your favorite accompaniments.
