Thai Coconut Curry with Vegetables

- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced

- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and diced (optional)
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
- 1 (14-ounce) can light coconut milk
- 1 cup vegetable broth
- 1 cup fresh or frozen mixed vegetables (such as carrots, peas, and bell peppers)
- 1/4 cup chopped fresh cilantro
Directions

Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, and ginger and cook for 3-4 minutes, until the onion is softened.

Add the bell pepper, jalapeno pepper (if using), turmeric, coriander, cumin, and curry powder. Cook for 1-2 minutes, until the spices are fragrant.
