California Roll Sushi Bowls

California Roll Sushi Bowls are a delicious and healthy way to enjoy sushi flavors without having to roll your own. They consist of cooked sushi rice mixed with a variety of ingredients such as cucumber, avocado, imitation crab meat, and sesame seeds. This meal is usually topped with a drizzle of soy sauce and wasabi. California Roll Sushi Bowls can be served as a light meal or snack, and they're perfect for lunch boxes or picnics.

Ingredients (2 Persons)

  • 1 cup uncooked sushi rice
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 avocado, diced
  • 1 cucumber, diced
  • 4 tablespoons imitation crab meat
  • 2 tablespoons masago (capelin roe)
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha (optional)

Directions

  • Step 1
    Rinse the sushi rice under cold water until the water runs clear. Place the rice in a medium saucepan with the water and bring to a boil. Reduce the heat to low and cover. Simmer for 15 minutes, until the water has been absorbed. Remove the pan from the heat and let it sit, covered, for 10 minutes.
  • Step 2
    In a small bowl, whisk together the rice vinegar, sugar, and salt. Pour the mixture over the cooked rice and stir to combine. Let the rice cool to room temperature.
  • Step 3
    Divide the rice among 4 bowls. Top each bowl with avocado, cucumber, imitation crab meat, masago, sesame seeds, mayonnaise, and sriracha (if using). Serve immediately.
