Vegetarian Sushi Salad Rolls

Ingredients (2 Persons)

  • 1 cup cooked brown rice
  • 1/2 cup cooked quinoa
  • 1/2 cup edamame, shelled
  • 1/2 avocado, sliced
  • 2 nori sheets
  • 2 tablespoons toasted sesame seeds

Directions

  • Step 1
    In a medium bowl, combine the cooked brown rice and quinoa.
  • Step 2
    Add the edamame and avocado, and mix until everything is combined.
  • Step 3
    Lay the nori sheets out on a flat surface.
  • Step 4
    Divide the rice mixture onto the two nori sheets, spreading it evenly across the surface.

    Roll the nori sheets up into tight logs.
  • Step 6
    Sprinkle the sesame seeds over the top of the sushi rolls.
  • Step 7
    Slice the sushi rolls into 1-inch pieces.
