Japanese Yakitori

Yakitori is a Japanese dish of grilled chicken skewers. The chicken is cut into small pieces and then skewered with a bamboo stick before being grilled over hot charcoal. The skewers are often served with a variety of sauces and condiments such as soy sauce, mirin, and salt. Yakitori is a popular street food in Japan, and can also be found in many restaurants.

Ingredients (2 Persons)

  • 4 chicken thighs
  • 2 tablespoons sake
  • 2 tablespoons mirin
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon vegetable oil

Directions

  • Step 1
    Cut the chicken thighs into 1-inch cubes and place them in a bowl.
  • Step 2
    In a separate bowl, whisk together the sake, mirin, soy sauce, and sugar until the sugar has dissolved.
  • Step 3
    Add the sake mixture to the chicken and stir to coat. Let the chicken marinate for at least 15 minutes and up to an hour.
  • Step 4
    Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until it is golden brown and cooked through, about 5 minutes.
  • Step 5
    Serve the yakitori with cooked rice, pickled vegetables, and scallions.
