Vegetable Curry

Vegetable curry is a dish that combines a variety of vegetables with a flavorful and aromatic curry sauce. It is a popular dish in many parts of the world, including India, Southeast Asia, and the Middle East. The vegetables used in vegetable curry can vary depending on the region and personal preference, but some of the most common choices include potatoes, carrots, eggplant, cauliflower, bell peppers, and peas. The curry sauce is usually made with a combination of spices such as turmeric, cumin, coriander, and garam masala. It is often served with rice or roti (flatbread) and is a great way to get a healthy and delicious meal.

Ingredients (2 Persons)

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons freshly grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (15 ounces) coconut milk
  • 1/2 cup vegetable broth
  • 2 cups fresh or frozen vegetables of your choice (such as carrots, peas, bell peppers, potatoes, etc.)
  • 1/4 cup chopped fresh cilantro

Directions

  • Step 1
    Heat the oil in a large skillet over medium heat. Add the onion, garlic, and ginger and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  • Step 2
    Stir in the cumin, coriander, turmeric, cinnamon, cayenne, salt, and pepper and cook for 1 minute more.
  • Step 3
    Add the diced tomatoes, chickpeas, coconut milk, vegetable broth, and vegetables and stir to combine. Bring the mixture to a simmer and cook, stirring occasionally, until the vegetables are tender, about 10 minutes.
  • Step 4
    Stir in the cilantro and cook for 1 minute more. Serve hot.
