Vegetable and Chickpea Curry

Ingredients (2 Persons)
- 3 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 teaspoons fresh ginger, grated
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon cayenne pepper
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 large carrot, diced
- 1 large sweet potato, diced
- 1 (14 ounce) can chickpeas, drained and rinsed
- 1 (14 ounce) can diced tomatoes
- 1 cup vegetable broth
- 1/4 cup fresh cilantro, chopped
- 2 cups cooked basmati rice
Directions

Step 1
Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the onion and garlic and cook until the onion is softened, about 5 minutes.

Stir in the ginger, garam masala, cumin, coriander, turmeric, cardamom, and cayenne pepper and cook for 1 minute.

Add the bell peppers, carrot, sweet potato, and chickpeas and cook for 5 minutes.

Stir in the diced tomatoes and vegetable broth and bring the mixture to a simmer.

Reduce the heat to low and simmer for 15 minutes, stirring occasionally.

Stir in the cilantro and season with salt and pepper to taste. Serve over basmati rice.
