Cucumber Avocado Roll Sushi

Cucumber Avocado Roll Sushi is a type of sushi roll that combines the fresh, crunchy texture of cucumber with the creamy texture of avocado. Ingredients (2 Persons)

  • 4 cups cooked white sushi rice
  • 2 tablespoons rice vinegar
  • 4 tablespoons sugar
  • 4 tablespoons salt
  • 4 sheets of nori (dried seaweed)
  • 1 cucumber, cut into thin strips
  • 1 avocado, cut into thin strips

Directions

  • Step 1
    In a medium bowl, mix together the rice vinegar, sugar, and salt until dissolved.
  • Step 2
    In a separate bowl, combine the cooked sushi rice with the vinegar mixture, stirring until the rice is evenly coated.
  • Step 3
    Place a sheet of nori on a sushi rolling mat. Spread about ½ cup of the sushi rice on the nori, leaving a ½ inch border on one side.
  • Step 4
    Arrange the cucumber and avocado strips in a line in the middle of the rice.
  • Step 5
    Using the rolling mat, roll the sushi into a tight cylinder. Wet the border with a bit of water to help the sushi stick together.
  • Step 6
    Repeat with the remaining nori, rice, and fillings.
