Shrimp Curry
Shrimp curry is a dish originating from South Asia that combines cooked shrimp with a spicy curry sauce. The curry sauce can be made from a variety of ingredients, including onions, garlic, ginger, and spices such as cumin, coriander, turmeric, and chili powder. Ingredients (2 Persons)
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14 ounce) can coconut milk
- 2 cups vegetable broth
- 3 cups diced tomatoes
- 2 cups cooked chickpeas or 1 (15 ounce) can chickpeas, drained and rinsed
- 1 pound shrimp, peeled and deveined
- 1/4 cup fresh cilantro, chopped (optional)
- Salt and pepper, to taste
Directions

Step 1
Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic, ginger, curry powder, cumin, coriander, cinnamon, and cayenne pepper (if using) to the pot and cook for 1 minute.

Pour in the coconut milk and vegetable broth and stir to combine.

Add the tomatoes, chickpeas, and shrimp to the pot and bring to a simmer. Simmer for 8-10 minutes, or until the shrimp are cooked through.

Stir in the cilantro (if using) and season with salt and pepper, to taste. Serve over cooked rice or quinoa.
