Shrimp Curry

Shrimp curry is a dish originating from South Asia that combines cooked shrimp with a spicy curry sauce. The curry sauce can be made from a variety of ingredients, including onions, garlic, ginger, and spices such as cumin, coriander, turmeric, and chili powder. The cooked shrimp are often cooked in coconut milk or yogurt to add a creamy texture to the dish. Shrimp curry is usually served with rice, naan bread, or other accompaniments. It can also be served as a main course with a side of vegetables or salad.

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14 ounce) can coconut milk
  • 2 cups vegetable broth
  • 3 cups diced tomatoes
  • 2 cups cooked chickpeas or 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 pound shrimp, peeled and deveined
  • 1/4 cup fresh cilantro, chopped (optional)
  • Salt and pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, curry powder, cumin, coriander, cinnamon, and cayenne pepper (if using) to the pot and cook for 1 minute.
  • Step 3
    Pour in the coconut milk and vegetable broth and stir to combine.
  • Step 4
    Add the tomatoes, chickpeas, and shrimp to the pot and bring to a simmer. Simmer for 8-10 minutes, or until the shrimp are cooked through.
  • Step 5
    Stir in the cilantro (if using) and season with salt and pepper, to taste. Serve over cooked rice or quinoa.
