Vegan Broccoli and Potato Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 jalapeno pepper, diced (optional)
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon ground cinnamon
  • salt and pepper, to taste
  • 1 head broccoli, cut into florets
  • 2 potatoes, peeled and diced
  • 1 (14 ounce) can diced tomatoes
  • 1 (14 ounce) can coconut milk

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook for about 5 minutes, until softened and translucent.
  • Step 2
    Add the garlic, ginger, jalapeno pepper (if using), cumin, coriander, turmeric, garam masala, cayenne pepper, and cinnamon. Cook for 1-2 minutes, until the spices are fragrant.
  • Step 3
    Add the broccoli and potatoes to the skillet, season with salt and pepper, and stir to combine. Cook for 5 minutes.
  • Step 4
    Add the diced tomatoes and coconut milk to the skillet and stir to combine. Bring the mixture to a simmer and cook for 10-15 minutes, until the vegetables are tender and the sauce has thickened.
