Vegan Chickpea Potato Curry

Ingredients (2 Persons)

  • 3 tablespoons olive oil
  • 2 large onions, diced
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground black pepper
  • 1 (14-ounce) can diced tomatoes, undrained
  • 3 cups vegetable broth
  • 3 cups peeled and diced potatoes
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1/2 cup frozen green peas, thawed
  • 1/4 cup chopped fresh cilantro
  • Salt to taste

Directions

  • Step 1
    Heat the olive oil in a large pot over medium heat. Add the onions and garlic and cook for 5 minutes, stirring occasionally, until the onions are softened.
  • Step 2
    Stir in the ginger, turmeric, cumin, coriander, garam masala, chili powder, cinnamon, cardamom, and black pepper and cook for 1 minute until fragrant.
  • Step 3
    Add the diced tomatoes and vegetable broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
  • Step 4
    Add the potatoes, chickpeas, and frozen peas and simmer for 10 minutes, or until the potatoes are tender.
  • Step 5
    Stir in the cilantro and season with salt to taste. Simmer for 5 minutes more before serving.
