Vegan Sushi Bowl with Tofu and Avocado

Ingredients (2 Persons)

  • 1 block extra-firm tofu, pressed and diced
  • 2 cups cooked sushi rice, cooled
  • 1 teaspoon sesame oil
  • 1 teaspoon tamari or soy sauce
  • 1/2 teaspoon white sesame seeds
  • 1 avocado, sliced
  • 1/2 cup cucumber, diced
  • 1/2 cup carrot, shredded
  • 1/4 cup pickled ginger, diced
  • 1/4 cup pickled red onion, diced
  • 1/4 cup radish, diced

Directions

  • Step 1
    Heat a large skillet over medium heat. Add the tofu and cook for 4-5 minutes, until golden brown.
  • Step 2
    Meanwhile, combine the cooked sushi rice, sesame oil, tamari, and sesame seeds in a medium bowl and mix to combine.
  • Step 3
    Divide the cooked sushi rice between four bowls. Top each bowl with the cooked tofu, avocado, cucumber, carrot, pickled ginger, pickled red onion, and radish.
  • Step 4
    Serve the vegan sushi bowls immediately, with soy sauce and wasabi, if desired.
