Crispy Tofu and Eggplant Stir-Fry

Crispy Tofu and Eggplant Stir-Fry is a healthy and delicious Chinese dish made with crispy tofu cubes and tender eggplant slices. Ingredients (2 Persons)

  • 1 block extra-firm tofu
  • 1 large eggplant, cut into 1-inch cubes
  • 1/4 cup cornstarch
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/4 cup soy sauce
  • 1/4 cup seasoned rice vinegar
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced

Directions

  • Step 1
    Press the tofu for 20 minutes to remove excess moisture. Cut the tofu into cubes.
  • Step 2
    Place the cubed tofu in a bowl and sprinkle with cornstarch. Toss to coat the tofu evenly.
  • Step 3
    Heat the vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden and crispy, about 4-5 minutes per side.
  • Step 4
    Add the eggplant cubes to the skillet and cook for 3-4 minutes, until the eggplant is tender.
  • Step 5
    Add the garlic and ginger and cook for 1 minute, stirring constantly.
  • Step 6
    Add the soy sauce, vinegar, water, honey, sesame oil, and red pepper flakes (if using). Stir to combine.
  • Step 7
    Bring the mixture to a simmer and cook for 2-3 minutes, until the sauce has thickened.
  • Step 8
    Stir in the green onions and cook for 1 minute. Serve over cooked rice or quinoa.
