Vegetarian Sushi Sandwich with Avocado and Carrots

Ingredients (2 Persons)

  • 4 sushi-style seaweed wraps
  • 1 ripe avocado, sliced
  • 2 carrots, peeled and julienned
  • 1/2 cucumber, julienned
  • 1/4 cup cooked brown rice
  • 1/4 cup cooked quinoa
  • 1 tablespoon sesame seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar

Directions

  • Step 1
    Lay the seaweed wraps on a flat surface. Place the avocado slices, carrots, and cucumber in the center of each wrap.
  • Step 2
    Top the vegetables with the cooked brown rice and quinoa.
  • Step 3
    Sprinkle each wrap with sesame seeds.
