Thai Red Curry with Tofu and Veggies

Thai red curry with tofu and veggies is a flavorful and hearty vegan dish that combines the spicy flavors of Thai red curry paste, fragrant coconut milk, and a mix of vegetables. The dish is then finished off with cubes of fried tofu for added protein and crunch. Ingredients (2 Persons)

  • 3 tablespoons red curry paste
  • 1 tablespoon coconut oil
  • 1 14-ounce can coconut milk
  • 1/2 cup vegetable broth
  • 1/2 teaspoon white sugar
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/2 pound extra-firm tofu, cubed
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup sliced mushrooms
  • 1 cup snow peas
  • 1 cup baby corn
  • 1/4 cup chopped fresh basil

Directions

  • Step 1
    Heat the curry paste and coconut oil in a large skillet over medium heat. Cook for 1-2 minutes, until fragrant.
  • Step 2
    Add the coconut milk, vegetable broth, sugar, fish sauce, lime juice, and salt to the skillet and stir to combine.
  • Step 3
    Add the tofu, bell peppers, mushrooms, snow peas, and baby corn to the skillet and stir to combine. Bring the mixture to a simmer and cook for 10-15 minutes, until the vegetables are tender.
  • Step 4
    Stir in the basil and cook for 1 minute, until heated through. Serve over steamed rice or noodles.
