Sea Urchin Nigiri Sushi

Sea Urchin Nigiri Sushi is a traditional sushi dish from Japan. It consists of a slice of raw sea urchin, or “uni”, placed atop a bed of vinegared sushi rice. Ingredients (2 Persons)

  • 4 ounces fresh sea urchin roe
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh lemon juice
  • 4 sheets of nori seaweed
  • 2 cups cooked sushi rice

Directions

  • Step 1
    Thaw the sea urchin, if needed, and place in a small bowl. Add the soy sauce and lemon juice and mix to combine.
  • Step 2
    Lay a sheet of nori on a sushi mat. Wet your hands and spread ½ cup of sushi rice onto the nori, leaving a ½-inch border around the edges.
  • Step 3
    Flip the nori over so that the rice is facing down. Place 2 tablespoons of sea urchin in the center of the nori.
  • Step 4
    Fold the edges of the nori up and over the sea urchin, pressing gently to form a taco shape. Place the sushi on a plate and repeat with the remaining ingredients.
