Sri Lankan Curry
Sri Lankan curry is a spiced dish of meat or fish, cooked in a rich and flavorful sauce. It is typically served with rice and Sri Lankan accompaniments such as coconut sambal, dhal curry and pickles. The main ingredients of Sri Lankan curry include spices such as cardamom, cinnamon, cloves, nutmeg and cumin, as well as onions, garlic, tomatoes, chili peppers and curry leaves. There are many variations of this dish, with some recipes calling for beef, chicken, fish, shrimp or vegetables. Sri Lankan curry is often quite spicy, but can be adapted to suit individual tastes.
Ingredients (2 Persons)
- 1 tablespoon vegetable oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 tablespoons fresh ginger, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground chili powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1 can (14.5 ounces) diced tomatoes
- 1 can (14.5 ounces) coconut milk
- 2 cups cooked chickpeas or 1 can (15 ounces)
- 1/4 cup chopped fresh cilantro
Directions

Step 1
Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic, ginger, cumin, coriander, turmeric, chili powder, cinnamon, cardamom, and cloves. Cook for 1 minute, stirring constantly.

Add the tomatoes and coconut milk to the skillet and bring the mixture to a simmer. Cook for 10 minutes.

Add the chickpeas and cook for 5 minutes more, or until the curry has thickened.

Serve the curry over cooked rice or with naan bread, if desired. Sprinkle with fresh cilantro before serving.
