Spicy Thai-Style Noodle Soup

- 2 tablespoons fish sauce
- 4 cups vegetable broth
- 2 cups coconut milk
- 1 red bell pepper, thinly sliced
- 1 cup snow peas, thinly sliced
- 1 cup mushrooms, sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh basil, chopped
- 8 ounces rice noodles
- 1/4 cup lime juice

Heat oil in a large pot over medium heat. Add garlic, onion and lemongrass, and cook until softened, about 5 minutes.

Stir in ginger, curry paste, and fish sauce and cook for 1 minute more.

Add vegetable broth and coconut milk, and bring to a simmer. Add bell pepper, snow peas, mushrooms, cilantro, and basil, and cook for 3 minutes.

Add rice noodles and cook for 5 minutes, until noodles are tender.
