Vegetarian Sushi Wraps with Avocado and Carrots

Vegetarian sushi wraps with avocado and carrots make a delicious and healthy snack or meal. The combination of the creamy avocado, crunchy carrots and the sticky sushi rice make for a delightful mix of textures and flavors. Ingredients (2 Persons)

  • 4 sheets of nori seaweed
  • 2 cups cooked sushi rice
  • 1 small avocado, sliced
  • 2 carrots, peeled and julienned
  • 1/4 cup toasted sesame seeds

Directions

  • Step 1
    Lay a sheet of nori on a bamboo sushi mat. Spread 1/2 cup of cooked sushi rice over the nori, leaving a 1-inch border on one side.
  • Step 2
    Arrange the avocado, carrots, and sesame seeds on the center of the rice. Roll the sushi using the bamboo mat to form a tight cylinder.
  • Step 3
    Repeat with the remaining ingredients.
  • Step 4
    Slice each roll into 6 pieces and serve immediately.
