Vegan Sushi Sandwich
Vegan Sushi Sandwich is a delicious, healthy, and easy to make sandwich that is perfect for a quick meal or snack. It is made with sushi rice, vegan mayonnaise, cucumber, carrots, and avocado, all wrapped up in a nori seaweed sheet. It is a great way to get your sushi fix without having to go to a restaurant. The vegan mayonnaise adds a creamy texture, while the vegetables provide crunch and flavor. This vegan sushi sandwich is a great way to enjoy all the flavors and textures of sushi, without the fish!
Ingredients (2 Persons)
- 1 cup cooked sushi rice
- 2 nori sheets
- 1 cucumber, sliced into thin strips
- 1 avocado, sliced
- 1 cup cooked edamame, shelled
- 1/4 cup pickled ginger
- 1/4 cup toasted sesame seeds
Directions

Step 1
Lay one of the nori sheets on a cutting board. Spread 1/2 cup of the sushi rice evenly over the nori sheet.

Layer the cucumber, avocado, edamame, pickled ginger, and sesame seeds on top of the rice.

Place the second nori sheet on top of the filling ingredients. Wet your fingers with water and press the top nori sheet lightly to the bottom nori sheet and the filling ingredients.

Step 4
Using a sharp knife, cut the sushi sandwich into four equal pieces.
