Fenugreek Curry

Ingredients (2 Persons)

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon fenugreek
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 2 cups vegetable broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • Salt and black pepper, to taste

Directions

  • Step 1
    Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, turmeric, fenugreek, cinnamon, cayenne pepper, cardamom, and cloves. Cook for 1 minute, until the spices are fragrant.
  • Step 3
    Add the vegetable broth and diced tomatoes and stir to combine. Bring the mixture to a simmer and cook for 5 minutes.
  • Step 4
    Add the chickpeas and stir to combine. Simmer for 5-10 minutes, until the sauce has thickened and the flavors have melded together. Season with salt and black pepper, to taste.
