Fish Curry

Fish curry is a traditional dish made by cooking fish in a sauce of spices and other ingredients. The dish can be found in many different cultures around the world and is a popular dish in India, Sri Lanka, Malaysia and Thailand. The curry is usually served with rice or bread, and is often flavored with coconut milk, mustard seeds, curry leaves, and a variety of other spices. Fish curry can be made with a variety of fish, including cod, salmon, tilapia, and snapper, and is a popular dish for both lunch and dinner.

Ingredients (2 Persons)

  • 1 pound of fish of your choice, cut into cubes
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon of chili powder
  • 1 teaspoon of turmeric
  • 1 14-ounce can of coconut milk
  • 1 cup of vegetable broth
  • 2 tablespoons of tomato paste
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1/2 cup of fresh cilantro, chopped

Directions

  • Step 1
    Heat a large saucepan over medium-high heat. Add the onion and cook until it is softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, cumin, coriander, chili powder, and turmeric and cook for 1 minute, until the spices are fragrant.
  • Step 3
    Add the coconut milk, vegetable broth, tomato paste, sugar, and salt to the pan and stir to combine. Bring the mixture to a simmer and cook for 5 minutes.
  • Step 4
    Add the fish to the pan and simmer for 8-10 minutes, until the fish is cooked through.
  • Step 5
    Remove the pan from heat and stir in the chopped cilantro. Serve over cooked rice or quinoa.
