Fish Curry
Fish curry is a traditional dish made by cooking fish in a sauce of spices and other ingredients. Ingredients (2 Persons)
- 1 pound of fish of your choice, cut into cubes
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon freshly grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon of chili powder
- 1 teaspoon of turmeric
- 1 14-ounce can of coconut milk
- 1 cup of vegetable broth
- 2 tablespoons of tomato paste
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1/2 cup of fresh cilantro, chopped
Directions

Step 1
Heat a large saucepan over medium-high heat. Add the onion and cook until it is softened, about 5 minutes.

Add the garlic, ginger, cumin, coriander, chili powder, and turmeric and cook for 1 minute, until the spices are fragrant.

Add the coconut milk, vegetable broth, tomato paste, sugar, and salt to the pan and stir to combine. Bring the mixture to a simmer and cook for 5 minutes.

Add the fish to the pan and simmer for 8-10 minutes, until the fish is cooked through.

Remove the pan from heat and stir in the chopped cilantro. Serve over cooked rice or quinoa.
