Thai Curry

Thai curry is a popular dish in Thai cuisine. It is a combination of aromatics, herbs and spices cooked in coconut milk. It is usually served with steamed rice, noodles or vegetables and can be made with a variety of meats and vegetables. Thai curry is typically spicy, but the level of heat can be adjusted to taste. Thai curry is a well-known dish throughout the world and is a great way to enjoy the flavors of Thailand.

Ingredients (2 Persons)

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons curry powder
  • 1 tablespoon brown sugar

Directions

  • Step 1
    Heat the vegetable oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Step 2
    Add the garlic, ginger, red pepper flakes, curry powder, and brown sugar to the skillet and stir to combine.
  • Step 3
    Add 1/2 cup of water to the skillet and stir to dissolve any browned bits from the bottom of the pan.
  • Step 4
    Add the coconut milk and stir to combine. Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally.
  • Step 5
    Add the vegetables and cook until they are tender, about 5 minutes. Taste the curry and adjust the seasoning if needed.
  • Step 6
    Serve the curry over steamed rice or noodles and enjoy.
