Ingredients (2 Persons)

  • 2 cups quinoa
  • 3 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup chopped green onions
  • 1 cup shredded carrots
  • 1 cup frozen edamame, thawed
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup sliced almonds, toasted

Directions

  • Step 1
    In a medium saucepan, combine the quinoa and water and bring to a boil. Reduce the heat to low and simmer, covered, for 15 minutes, or until the liquid is absorbed.
  • Step 2
    In a small bowl, whisk together the rice vinegar, sesame oil, red pepper flakes, honey, and soy sauce until combined.
  • Step 3
    In a large bowl, combine the cooked quinoa, green onions, carrots, edamame, bell peppers, and almonds. Pour the dressing over the salad and toss to combine.
  • Step 4
    Serve immediately or chill until ready to serve.
