Singapore Chilli Crab

- 2 pounds fresh crab, cleaned and cut into pieces
- 1/4 cup vegetable oil
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 1/4 cup tomato ketchup
- 1/4 cup sweet chili sauce
- 2 tablespoons oyster sauce
- 2 tablespoons light soy sauce
- 1 teaspoon sugar
- 1/4 cup water
- 2 tablespoons cornstarch
- 1/4 teaspoon white pepper

Step 1
Heat the oil in a wok or large skillet over medium-high heat. Add the garlic and ginger and cook for 1 minute, stirring constantly.

Add the crab pieces and cook for 2 minutes, stirring frequently.

Stir in the tomato ketchup, sweet chili sauce, oyster sauce, soy sauce, and sugar. Cook for 1 minute, stirring constantly.

Add the water and bring the mixture to a simmer. Cook for 5-7 minutes, stirring occasionally, until the crab is cooked through.

In a small bowl, whisk together the cornstarch and white pepper. Slowly add the cornstarch mixture to the wok, stirring constantly, until the sauce has thickened.

Serve hot with steamed rice.
